Drunken Zebra

Life often resembles a zebra, with its alternating dark and light stripes, but it’s a good journey nonetheless, much like the stride of a striped horse.

To infuse more joy into this zebra-like existence, I’ve created the Drunken Zebra, a dessert cocktail or jelly cocktail, call it what you will, based on the delightful combination of Panna Cotta and berry jelly.

Ingredients:
For 6 dessert glasses, each containing 200 ml (6 1/2 oz).
-24 oz / 720 ml cream
-16 oz / 480 ml freshly pressed blackberry juice
-8 oz / 240 ml vodka
-1 oz / 30 g sugar
-1/5 oz / 6 ml vanilla extract
-5 tsp gelatin

Process:

Begin by harvesting fresh blackberries or purchasing them. Press the berries to extract the juice.

1. Start with the cream: Pour 1/3 part (240 ml) into a heat-resistant glass. Sprinkle 1 teaspoon of gelatin over it and set it aside for 5-10 minutes to bloom. Add 1/5 part (6 grams) of sugar and 1/3 part (2 ml) of vanilla extract. Mix well and microwave until it begins to boil. Allow it to cool down to room temperature, then divide it among dessert glasses. Refrigerate until fully set, which usually takes at least 3 hours.

2. Move on to the blackberry juice: Pour 1/2 part (240 ml) into another heat-resistant glass. Sprinkle 1 teaspoon of gelatin over it and set it aside for 5-10 minutes to bloom. Add 1/5 part (6 grams) of sugar, mix well, and microwave until it begins to boil. Let it cool down to room temperature, then add half of the vodka (120 ml) and mix. Carefully pour this mixture over the cream layer in the dessert glasses, using a spoon to help distribute it evenly. Refrigerate until fully set.

3. Repeat the layering process with cream, juice, and cream.

Feel free to adjust the sugar and alcohol levels to suit your taste, and don’t hesitate to experiment with different berry varieties.

Garnish: A fresh blackberry atop each glass.
